As usual, start by dissolving the butter in a saucepan. Then slice the potatoes and onion, and fry it in the previously dissolved butter for 5 minutes. When done, add the haricot beans together with water and boil everything in the Saucepan for 2 hours.

To make vegetarian Chestnut Soup, we will need these ingredients:

  • 1 pound of Chestnuts,

  • 1 and a half pints of Water,

  • yolk of 1 egg (you can also use 1 teaspoon of Cream),

  • 1 small Turnip,

  • 1 ounce of Butter,

  • half teaspoon of Salt,

  • 6 peppercorns and

Follow these steps to cook or prepare a vegetarian Chestnut Recipe:

The first thing you should do is boil the chestnuts for half an hour.

Meanwhile, dissolve the butter in a stewpan. Then fry sliced onion and turnip in it and add the water flavourings. Add the chestnuts as well, but make sure to remove the shells and the skin. Boil everything for 1 hour.

When that is done, put the cream or yolk in a basin and strain the soup on to it. Stir everything and then strain it back into the saucepan. You are almost done now.

In order to cook the Celery Soup, you will need these ingredients:

  • 3 large heads of Celery,

  • 1 large Onion,

  • 1 Potato,

  • 3 pins of Water,

  • 1 dozen of Peppercorns,

  • 2 ounces of Butter,

  • 3/4 ounce of Flour,

  • 1 and a half teaspoons of Salt,

  • half pint of Milk,

  • 1 pinch of Mace.


When you have all the ingredients above, you can start preparing the Celery Soup.

How to prepare a vegetarian Celery Soup


This recipe is somehow very simple and easy to prepare. Just follow the next steps.

Begin by dissolving 1 ounce of Butter in a pretty big-sized saucepan. Then slice all the vegetables and add them to the Saucepan as well. Do the same with the rest of the ingredients, except for the flour, milk and the remaining ounce of Butter.

Simmer everything in the saucepan for 1 and a half hour and then strain it. Then thicken the Soup with flour and butter. When finished, add the milk and you are done! Make sure to serve the Soup while it is still very hot.

It is very easy and quick to prepare a Carrot Soup. Here is how you should do it:

Begin with dissolving the butter in a large saucepan. Slice up the vegetables (that is Beans, Carrots, Onions and Celery) and then put them in the saucepan together with the Water and Peppercorns. Simmer every thing in the saucepan for 1 hour.

Then add Salt to the saucepan and simmer again for 1 hour and a half. When you are done, strain the whole thing and that is it! Your Carrot Soup is ready to be served.

Brown Vegetarian Soup Recipe

Hope you like previously bosted recipes for vegetarian soups. This time we take a look at how to make a Brown Vegetarian Soup. Just like with the other recipes, lets first look at the ingredients we need to make a Brown Soup.

Ingredients for Brown Vegetarian Soup


We need the following ingredients to prepare the Brown Vegetarian Soup:

  • 6 cold boiled Potatoes,

  • 2 Onions stuck with Cloves,

  • 1 Tomato,

  • 2 and a half pints of Stock,

  • 2 ounces of Butter,

  • 1 strip of lemon rind,

  • 3 whole Allspice,

  • 1 dozen of Peppercorns,

  • 1 teaspoon of Worcester sauce,

  • Pepper and Salt for the taste,

  • 1 dozen of Forcemeat balls.


Now lets look at how to actually prepare this soup.

How to prepare Brown Vegetarian Soup


The first thing you should do is cut the potatoes and fry them very cautiously in the butter. The aim here is to make them soundly brown, and not to burn them, so be careful with that.

Put the fried potatos in a saucepan together with the Stock and simmer (to almost boil the liquid in saucepan over low heat) for 5 minutes. This will make the brown colour in the potatoes to boil off into the soup. When you are done with this, remove the potatoes from the soup.

Return the soup back to the saucepan and then add the following ingredients:

  • onions (stuck with three cloves),

  • lemon rind,

  • sauce,

  • spices,

  • pepper and salt and

  • tomato (slice it and fry it before you add it to the soup).


With that done, put in the forcemeat balls (fry the forcemeat balls before you add them). When you are done, serve this Brown Vegetarian Soup quickly. That is it!

Recipe for Vegetarian Asparagus Soup

Today I have another great Vegetarian soup recipe for you, in particular I will give you a recipe for Vegetarian Asparagus Soup.

Ingredients needed for Asparagus Soup


You will need the following ingredients to make Asparagus Soup:

  • 60 heads of Asparagus,

  • 1 cabbage of Lettuce,

  • 2 quarts of Water,

  • 1 ounce of Butter,

  • 6 Onions (medium sized Onions are recommended),

  • a sprig of Mint,

  • 1 tablespoon of Sago,

  • 2 teaspoons of Salt,

  • half teaspoon of Pepper,

  • 2 or 3 drops of Spinach extract.


After you have all the ingredients above, you can start preparing the soup.

How to prepare Vegetarian Asparagus Soup


Take the butter and dissolve it in a large saucepan. Then chop the Lettuce delicately and place it in the saucepan together with salt, pepper, mint, sliced onions and the green portion of the Asparagus. Make sure to set aside around 30 tops.

Boil everything you just placed in the saucepan for 60 minutes. Then take the Sago and stir it in frequently while boiling everyting again for 30 minutes, but this time without the lid. In the meanwhile separately boil the 30 tops you set aside before in a little salted water until tender.

When you are done, filter the soup through a hair sieve (make sure to rub the pulp through with a wooden spoon) into a hot tureen. After that, add the tops and the colouring, and the Asparagus Soup is ready to be served!

Additional things to consider


If you cook this vegetarian Asparagus Soup before you actually serve it, make sure to not cook the tops until you re-heat the soup again.

Vegetarian Artichoke Soup recipe

I will begin this Vegetarian Soup Recipes blog with giving you a recipe for Artichoke soup. With that said, lets look at the ingriedients you need to prepare this soup.

Ingredients needed for Artichoke soup


In order to make this artichoke soup, you need the following ingredients:

  • 3 pounds of Jerusalem artichokes (This is the weight after peeling),

  • 2 pints of Water,

  • 1 pint of Milk,

  • 2 ounces of Butter,

  • 2 teaspoons of Salt,

  • 2 Shalots,

  • 2 teaspoons of Chopped Celery,

  • 1 tablespoon of Sago and

  • 1 dozen of Peppercorns, with a suspicion of Mace and Cinnamon tied together in Muslin.


Now that we know what we need for this vegetarian soup, lets now look at how to prepare it.

How to prepare Vegetarian Artichoke Soup


The first thing you should do is peel the artichokes and throw them into cold water. Melt the butter in a large enamelled sauce pan then. Take the artichokes out of the water and slice them, then fry them in butter for 5 minutes.

Next, add the water together with shalots, chopped celery and the seasonings. Boil this for 45 minutes and remove all the scum as it comes up on the surface. After that, add the milk and sago, and then stir frequently for 20 minutes.

Rub everything you just made through a hair sieve (or flour sifter) into a tureen and you are done. Enjoy the meal!

Additional things to consider


Some people prefer to use cream instead of sago and milk to prepare Artichoke soup in this way. But I recommend using sago and milk simply because it makes soup exceedingly tasty. What do you think about it?
