Ingredients needed for Artichoke soup
In order to make this artichoke soup, you need the following ingredients:
- 3 pounds of Jerusalem artichokes (This is the weight after peeling),
- 2 pints of Water,
- 1 pint of Milk,
- 2 ounces of Butter,
- 2 teaspoons of Salt,
- 2 Shalots,
- 2 teaspoons of Chopped Celery,
- 1 tablespoon of Sago and
- 1 dozen of Peppercorns, with a suspicion of Mace and Cinnamon tied together in Muslin.

How to prepare Vegetarian Artichoke Soup
The first thing you should do is peel the artichokes and throw them into cold water. Melt the butter in a large enamelled sauce pan then. Take the artichokes out of the water and slice them, then fry them in butter for 5 minutes.
Next, add the water together with shalots, chopped celery and the seasonings. Boil this for 45 minutes and remove all the scum as it comes up on the surface. After that, add the milk and sago, and then stir frequently for 20 minutes.
Rub everything you just made through a hair sieve (or flour sifter) into a tureen and you are done. Enjoy the meal!
Additional things to consider
Some people prefer to use cream instead of sago and milk to prepare Artichoke soup in this way. But I recommend using sago and milk simply because it makes soup exceedingly tasty. What do you think about it?
